Thanks to finding a ton of meat marked down and cooking lots of it in advance, there will be at least trace amounts of meat in SIX (believe it) dinners this week! Before you faint from excitement and disbelief, allow me to proceed to the menu.
Monday – Pomegranate Chipotle Chicken with brown rice and green beans
Tuesday – Baked bean casserole (contains trace amount of ground beef), broccoli
Wednesday – Chicken Potato Black Bean Soup (from Family Feasts for $75 a Week)
Thursday – Ham and cheese baked potatoes (I cooked, cubed and froze a GIGANTIC ham, so we’ll use some of the cubes on the potatoes, green beans
Friday – homemade pizza, salad
Saturday – Spiced Chicken with yogurt sauce, brown rice, (because I have no couscous) salad
Sunday – Lentil Sausage Soup, breadsticks
I got an Amish Friendship Bread starter last week and I’m interested to see how it turns out. I’m planning to be totally unfriendly and use all the starter myself instead of passing it out to others. Is that bad? I found a site that lists things to do with the starter, so I think I’ll see how it turns out as pancakes, muffins, and English muffins. I’ll keep you posted.
