Menu Plan Monday

Since I did my menu planning last year in a pretty day planner, and since that day planner ran out of pages last week, I decided to post my meal plan for this week so that my husband will know what’s up.

Monday: Whole wheat spaghetti, homemade sauce using ground turkey instead of ground beef (not because I have anything against ground beef, I just don’t have any in the freezer right now), steamed broccoli

Tuesday: Pumpkin soup, pumpkin muffins, green beans

Wednesday: Taco beans and rice (brown rice with pinto beans cooked in taco seasoning, topped with cheddar cheese and collard greens shredded into very very tiny pieces so as not to offend my husband’s sensibilities)

Thursday: Baked potatoes with broccoli and cheese, homemade applesauce

Friday: Homemade pizza, salad

Saturday: Curried lentils and brown rice, salad

Sunday: Turkey vegetable soup, homemade breadsticks

Breakfasts: oatmeal, clementines
                    eggs, grapefruit
                    cheese grits, clementines
                   muffins, yogurt
                   pumpkin pancakes, 

Lunches: leftovers
                peanut butter and homemade pumpkin butter sandwiches, apples
                smoothies (frozen strawberries, blueberries, and/or bananas, spinach, tofu, kefir or yogurt)
                veggies and hummus
               soup and salad
