A Light Tea Treat

For Valentine’s Day my mom made us these cute heart shaped frozen fruit treats. The recipe comes from my great aunt Marjorie who lives in Wales. It makes a festive Valentine’s Day tea treat, but is also nice in other shapes for all sorts of different occasions. It gives one the feeling of having eaten dessert, but isn’t as rich as ice cream.

Frozen Fruit Salad
2 cups sour cream
3/4 cup sugar
nine ounce can crushed pineapple with juice
1 banana, chopped
3 tablespoons marischino cherries, chopped (you can use more if you like cherries, which I do)
2 tablespoons lemon juice
1/8 teaspoon salt

Mix all ingredients together and freeze in small molds or in cupcake papers in a 12 cup muffin tin.

    1. I think you could use other fruits, although I haven’t tried it myself. I do let it sit out a minute or two before serving, but they are pretty solid so require some scraping with a spoon as you eat them. That said, the sour cream gives it more of a creamy texture and less of the solid-block-of-ice effect that fruit juice popsicles have. I hope that helps!
