Healthy Harvest Muffins

This time of year I love to make pumpkin everything. Pumpkin soup, pumpkin bread, pumpkin cake…you name it, I love it.

Yesterday I found a fabulous recipe for pumpkin applesauce muffins, and I thought I would share it with my modifications. The original recipe made three dozen muffins, but I only have one muffin pan, and in making the measurements smaller I thought maybe there was still too much sugar and not enough fiber, so I changed a few other things. My version is below:

Healthy Harvest Muffins

1.5 cups whole wheat pastry flour (or you could use all purpose)
1/2 cup sugar
1/2 cup brown sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons pumpkin pie spice blend
2 eggs
1 can pumpkin puree (not pumpkin pie filling) – 16 ounce, or half of one larger can
1 cup applesauce (I used apple blackberry sauce which was a nice addition)
4 Tablespoons whole roasted flax seeds
4 Tablespoons ground flax seed meal

1) Preheat oven to 350 degrees
2) Grease muffin cups or spray with non-stick cooking spray (the notes from one of the reviewers of the original recipe said the muffins stick to muffin cups, which I hate, so I went with the greasing method)
3) Mix dry ingredients in a big bowl, mix wet ingredients separately in a smaller bowl
4) Add wet ingredient mixture to dry ingredient mixture and mix thoroughly
5) Spoon batter into prepared muffin cups
6) Bake at 350 degrees for 30-35 minutes
7) Remove from oven and carefully lift each muffin to tip it and allow steam to escape
8) After a few minutes, remove muffins to a cooling rack
