Monday: Pasta with creamy sweet potato, spinach, chorizo sausage, and cheese sauce (I’m basing this off of a recipe in Deceptively Delicious that shows how to make something like mac and cheese without as much cheese by subbing sweet potatoes or squash puree)
Tuesday: Pepperoni pizza, broccoli
Wednesday: Vegetable and sausage soup (I made this today and it was pretty good, I just made up the recipe with lots of vegetables and beef broth and organic andouille chicken sausage. I put in beans but I used my immersion blender to puree them.)
Thursday: Lentil curry over rice, green beans
Friday: Leftover pasta
Saturday: Leftover soup
Sunday: I think we are going to try to go to our church fellowship lunch next week, although that is usually a recipe (ha) for disaster with two little ones in dire need of naps so we’ll see how it goes. I think we’re supposed to bring chili. In any case, we will have chili on Sunday, whether or not we decide to risk the fellowship lunch!
