Beef, Glorious Beef

Today Alaina and I went to pick up our beef (we split a quarter of a cow; as you’ll recall my 1/8th is my early birthday present!). I couldn’t wait to eat some!

One of the great things about organic grass fed beef is that it’s really lean. At left is a picture of the ground beef I browned tonight. I didn’t even have to drain it because it was so lean! The picture shows the beef as it was cooking – there was a tiny bit of fat so it didn’t burn to the pan, but seriously not enough to drain. There wouldn’t even have been a teaspoon full of fat!

The other great thing about the meat is the flavor – ahhhhh! I took one bite of my dinner and I felt all of my nerve endings give a collective sigh of satisfaction. The protein coursed through my system and we raised a toast to beef! No seriously, we did a toast. It was a very ceremonial repast.

The beef went very nicely with pasta and a sauce made from beef broth, balsamic vinegar, tomatoes, and onion.

Beef. Mmm. Beef.
