Waffling

I like to make waffles for breakfast. They are fast and easy and everyone likes them. I’ve been experimenting with different ingredients with pretty good results. First, I mix flours – I’ve tried whole wheat, white, cornmeal, and anything else I’ve had on hand. I like the half cornmeal half regular flour mix, because the cornmeal gives a nice crispy crust to the waffles. Instead of eggs I use ground flax seed, and instead of milk I just use water (we only get one gallon of milk a week from the farm, so I try to minimize how much I cook with milk) and I like how that makes the waffles taste lighter. Sometimes I put some vanilla flavored protein powder in too.
