I just had to do a post on tonight’s adventure in carbohydrates. The other night I made mashed potatoes out of the leftover roasted red potatoes we had a few days before that. I’m not a big fan of mashed potatoes, and they weren’t getting any more appetizing in the refrigerator, so I decided to take the potatoes through their THIRD iteration and make muffins. I don’t know, it seemed like a rational idea at the time.
I have a good muffin recipe that allows for all kinds of substitutions, including “wet additions” like leftover oatmeal or grits, so I figured mashed potatoes kind of falls into that category. They actually didn’t turn out as bad as you might imagine. They tasted more like biscuits than muffins. Josh did a wonderful job grilling and when taken all together with some steamed broccoli, it wasn’t a bad supper. In hindsight, mashed potato muffins is a really weird idea, but all’s well that ends well. I should get some kind of award for using up leftovers in unusual ways!
