Question of the Day

Is edamame a vegetable or a legume?

Having had this question in the back of my mind for several days now, I turned to www.askjeeves.com for an answer. As it turns out, there are grain soybeans and vegetable soybeans, and edamame is the latter. So it’s apparently a vegetable AND a legume, which explains why the Costco package called it “Nature’s Wonder Vegetable” but also why edamame is so high in protein. In any case, edamame is my current favorite snack – healthy, high in protein, reasonably filling, and time consuming to eat (rendering it a good snack for when I just feel like snacking). Edamame is fairly cheap in bulk at Costco, and is a breeze to fix, since you just have to thaw it in a bowl in the fridge, or throw it in the microwave. I highly recommend it to everyone!
